Saddle Up Stuart! Cowboysis Coming!!!

STUART — Jim McCoin has started work to turn the old R.J. Gator’s Stuart location at U.S. 1 north of Salerno Road into aCowboy’s Bar-B-Q & Steak Co. restaurant.McCoin, who opened the first Cowboy’s Bar-B-Q & Steak Co. inOkeechobee last year and stores this February in Fort Pierce and Sebring, is busy renovating the location at 2902 SE Gran Park Way with wife Renee Klingler, operations manager. They said the new location could open before the end of April.Area residents are already starting to bring in photos of ranch and equestrian activities to ornament the walls at the restaurant, McCoin said. He collects cowboy-related items from the area —for example, cowboy hats to serve as lampshades — which he uses to decorate the restaurants.He said the restaurant caters to a local clientele.“If you go in at lunchtime, I’d say eight out of 10 people have been there multiple times,” he said. “We’re here for the lawn man and the tree man.”McCoin, who also owns Skipjack’s seafood restaurant in Okeechobee, said he is scouting sites in Palm Beach County and Orlando for additional Cowboy’s. But he doesn’t have plans to open any more unless he finds a location he can’t pass up.They want to perfect the Cowboy’s concept before taking on any further expansion, he said.“Everything’s good but we’re always trying to make everything better,” he said.
